As Sebi mentioned, the (All) page is the index of the items in the dataset/content manager and the (Title) page is showing the information for each line item in the content manager.

I have made a video below highlighting the difference.

You can add 2 types of dynamic pages you can add to your site:

Dynamic item page: A page designed to display one item from your collection at a time.
Dynamic category page: A page designed to display multiple items in your collection that all match some criteria. These items would be displayed in a repeater or gallery
